 1 lb grated cauliflower
 1 tsp garlic powder or onion powder (optional)
 3 oz pimientos de padron or poblano peppers
 ½ cup mayonnaise
 1 tsp olive oil
 salt and pepper

Mix mayonnaise and garlic or onion powder in a small bowl and set aside.
