For The Crust: Combine the dry ingredients together in a food processor, blend in the butter until combined. Rest in the fridge for 1 Hour
For the Filling: Combine all filling ingredients, except for the egg yolk, into a pot over medium heat until combined.
Press the crust into an 8" tart pan, and cook at 180C (355F) for 15 Minutes.
Pour in the filling, and set in the fridge for at least 3 Hours.
