 4 boneless Chicken Thighs
 2 stalks of lemon grass
 2 garlic cloves
 1 Leek
 14 oz Coconut Cream
 1 lime zest
 1 tsp fresh ginger
 1 tbsp curry powder
 2 tbsp Coconut oil
 1 Sliced red bell pepper
 ½ Chopped red chili pepper

Crush the rough part of the lemongrass with the broad side of a knife or a pestle.

Cut the chicken into 1/8-inch pieces.
