Keto Coconut Chicken Recipe

 2 Chicken breasts, cut into cubes
 1 Lime Juice
 1 big bunch spring onions, roughly chopped
 1 tsp garlic, minced
 1 cup coconut milk
 1 cup tomato puree
 1 tbsp red curry powder
 2 tbsp avocado oil

Heat the oil in a pan over medium heat.

Once oil is hot, add onion and cook for about 5 Minutes

Season with salt, pepper and red curry powder.

Add chicken cubes in a pan and cook for about 5 Minutes, until cooked through.

Add tomato puree and coconut milk

Cover and cook for about 5-8 minutes.

Once cooked remove from heat. Serve with cauliflower rice and enjoy!
