Preheat oven to 350F.
Wisk your egg in a bowl and put your zucchinis on it, before covering them with your pork rinds mixture.
Heat the olive oil in a pan and place your zucchini; fry them evenly for approx. 3 minutes.
The reason for frying them is to make them less watery.
When you are done frying all of your zucchini slices place a layer on a baking pan, followed by your marinara and parmesan cheese and repeat. I topped it with cherry tomatoes, you can also add fresh basil.
Place it in the oven and bake them for 20 minutes. Continue to broil this until the cheese turns golden.
