In  conclusion Cauliflower is one ingredient every Keto Dieters will have in their fridge always; having said that I find that a cauliflower soup, is one superb  meal, rich in flavor, very healthy and will keep you full for a while.

Keto Cauliflower Soup Recipe

Yields5 Servings

 ¼ cup butter
 1 Head cauliflower chopped
 ¼ sweet onion
 4 cups chicken Stock
 1 cup heavy cream
 1 cup Shredded cheddar cheese
 ¼ tbsp ground nutmeg
Fresh Ground pepper and kosher salt to taste

In a large stockpot over medium heat, add butter.

Sauté onion and cauliflower until tender and lightly browned, about 10 Minutes

Add chicken stock and nutmeg to a pot and bring the liquid to a boil.

Reduce heat to low and simmer until vegetables are very tender, about 15 Minutes.

Remove pot from heat, stir in heavy cream and puree soup with an immersion blender or food processor until smooth

Season soup with salt and pepper and serve topped with cheddar.
